Every La Bisoni loaf is three ingredients, a wild starter, and about thirty hours of patience. Because there are only three, we can tell you exactly where each one comes from — and prove we haven't changed the story after the fact.
A blend of Trigo Tipo 65 (90%) & Tipo 150 (10%) — certified organic, stone-milled Portuguese wheat (PT-BIO-08) from one family mill in Alenquer.
Sal marinho refinado — refined Portuguese sea salt, nothing added, from the very same mill. 10 g a loaf, to slow the ferment.
Filtered, from right here in Azóia, at the wild end of the Sesimbra coast.
Our wild sourdough starter — flour, water and the airborne yeasts of the Arrábida. No commercial yeast, ever.
Our flour and our salt travel from one place — a family flour mill in the hills of Alenquer, about an hour up the coast. You can see exactly where on the map.

Each bake is recorded as a batch: the date, the exact sacks used, water and starter — sealed with a cryptographic fingerprint (a SHA-256 hash) computed from the batch details plus the fingerprint of the batch before it, the same chaining idea behind blockchain. If anyone altered an old record, every fingerprint after it would visibly break. Simple ingredients, unbreakable story.
Newest bake first — every bake day adds a fresh record at the top, each with its own photographed sacks. Anyone can recompute the chain and check it, just ask us how.
